HRI Staff Assists at Fundraiser

Katie Albert, lab coordinator for the Hotel Restaurant and Institution Management Department, and Nicolette Stevenson ’04, adjunct pastry chef, volunteered their time at an important fundraising event in October. The Hudson River Fisherman’s Association held a dinner to raise money for the Darren Cardinal Memorial Reef Fund. Coordinated by Les Marmitons NJ, an organization of food enthusiasts who meet to learning cooking from professional chefs, the sold-out event featured celebrity chefs Jacques Torres (Mr. Chocolate on the Food Network) and Claude Saillard of Le Cirque, arguably the most famous restaurant in New York.

A four-course gourmet menu was prepared by Chef Torres and Chef Saillard with the help of Ms. Albert and Ms. Stevenson. The event was in memory of Darren Cardinal, an important club member who passed away earlier this year.

The goal of the event was surpassed as the fundraiser helped net $30,000 to fund the ecological project bearing Mr. Cardinal’s name. Ms. Albert and Ms. Stevenson enjoyed being an important part of the evening volunteering to help the chefs prepare, plate, and serve a fabulous meal. Five different hors d’oeuvres, a salad of Margret de Canard, local striped bass and braised beef short ribs delighted the supporters. The meal was followed by an incredible dessert course featuring two classic “Mr. Chocolate” offerings. The women in attendance were served one of Chef Torres’ famous chocolate stoves, and the men were treated to a molten chocolate lava cake.
