Students in the Garde Manger class learned the fundamentals of ice carving behind the College Center in April. The class used chain saws to mold large blocks of ice and then chisels to create the details. Garde manger, which teaches students the art of cold food presentation, is taught by John Shirley, executive chef at Unidine, which provides dining services for corporations, hospitals and senior centers.
